A Texan favorite: Breakfast Tacos!

Breakfast tacos are a Texan favorite, featuring warm tortillas filled with scrambled eggs, cheese, bacon, sausage, potatoes, and various other toppings.

Since they are a popular grab-and-go morning meal, here is how to make’em.

Ingredients:

  • 4 large tortillas (flour or corn)
  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 tablespoon butter or oil
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • Optional toppings: cooked bacon or sausage, diced tomatoes, diced onions, chopped bell peppers, sliced jalapeños, chopped cilantro, salsa, sour cream

Instructions:

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat the butter or oil in a large skillet over medium heat.
  3. Pour the egg mixture into the skillet and scramble the eggs, stirring occasionally, until they are cooked to your desired consistency.
  4. Warm the tortillas in a separate skillet or microwave.
  5. Assemble the tacos by placing a scoop of scrambled eggs onto each tortilla.
  6. Sprinkle shredded cheese over the eggs while they are still hot, allowing it to melt slightly.
  7. Add your desired toppings, such as cooked bacon or sausage, diced tomatoes, diced onions, chopped bell peppers, sliced jalapeños, chopped cilantro, salsa, or sour cream.
  8. Fold the tortillas over the filling to create tacos.
  9. Serve the breakfast tacos immediately while they are still warm.
