Corn on the Cob with Herb Butter

t’s a simple and delicious way to enjoy sweet and tender corn on the cob, enhanced with flavorful herb-infused butter. This side dish is perfect for summer cookouts, barbecues, or any time you want to enjoy the natural sweetness of fresh corn. The herb butter adds a delightful burst of flavor, making it a favorite accompaniment to grilled meats and other American dishes.

Ingredients:

  • 4-6 ears of fresh corn, husked
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 tablespoons chopped fresh herbs (such as parsley, chives, or cilantro)
  • 1 teaspoon minced garlic
  • Zest of 1 lemon (optional)
  • Salt and black pepper to taste

Instructions:

  1. Prepare the herb butter by combining the softened butter, chopped fresh herbs, minced garlic, and lemon zest (if using) in a bowl. Mix well until all the ingredients are incorporated.
  2. Season the herb butter with salt and black pepper to taste. Adjust the seasoning to your preference.
  3. Bring a large pot of water to a boil. Add a pinch of salt to the water.
  4. Once the water is boiling, carefully add the husked ears of corn to the pot.
  5. Boil the corn for about 4-5 minutes until they are tender and fully cooked. Avoid overcooking, as the corn can become mushy.
  6. Using tongs, remove the cooked corn from the pot and let them drain briefly.
  7. While the corn is still warm, generously spread the herb butter over each ear of corn, coating them evenly.
