Florida’s Key Lime Pie

Florida’s Key Lime Pie is a quintessential Florida dessert. Made with key lime juice, egg yolks, and sweetened condensed milk in a pie crust, it’s a refreshing and tangy treat, often topped with meringue or whipped cream, something you can enjoy over a romantic dinner, or just because you like it. Unless you share it on social media, no one will know how you enjoy it. Here’s how to make it:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 3 cups sweetened condensed milk
  • 1/2 cup sour cream
  • 3/4 cup key lime juice (freshly squeezed if possible)
  • Zest of 1 lime

For the Topping (Optional):

  • 1 cup heavy cream
  • 2 tablespoons sugar
  • Lime slices or zest for garnish

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Make the Crust:

  • In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a 9-inch pie dish to create the crust.

3. Bake the Crust:

  • Bake the crust in the preheated oven for about 10 minutes or until it’s set. Remove it from the oven and let it cool while you prepare the filling.

4. Prepare the Filling:

  • In a large bowl, whisk together the sweetened condensed milk, sour cream, key lime juice, and lime zest until well combined.

5. Pour into the Crust:

  • Pour the filling into the cooled graham cracker crust.

6. Bake the Pie:

  • Bake the pie in the oven for approximately 15 minutes. The edges should be set, but the center may still be slightly wobbly. Keep an eye on it to avoid over-baking.

7. Cool and Chill:

  • Allow the pie to cool to room temperature, then refrigerate it for at least 3 hours or until it’s thoroughly chilled.

8. Make the Whipped Cream (Optional):

  • Just before serving, you can whip the heavy cream and sugar until stiff peaks form. Spread or pipe the whipped cream over the pie. Garnish with lime slices or zest.

9. Serve and Enjoy!

  • Slice and serve the Key Lime Pie chilled. It’s a delightful and refreshing dessert, perfect for warm days!
