Instant Pot recipe: Bacon and Potato Soup

This creamy and hearty soup is perfect for chilly days when you want something warm and comforting. The Instant Pot makes it quick and easy to prepare, making it an ideal weeknight dinner option for bacon lovers and soup enthusiasts alike!

Ingredients:

  • 6 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 3 cups chicken broth
  • 1 cup milk or heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and black pepper to taste
  • Chopped green onions and additional shredded cheddar cheese for garnish (optional)

Instructions:

  1. Set your Instant Pot to the sauté mode. Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set it aside on a plate lined with paper towels to drain excess grease.
  2. In the same Instant Pot with the bacon drippings, add the diced onion and sauté until it becomes translucent. Stir in the minced garlic and cook for an additional 30 seconds.
  3. Add the diced potatoes to the pot, followed by the chicken broth. Give it a good stir to combine.
  4. Close the Instant Pot lid and set it to manual pressure cooking mode for 5 minutes. Once the cooking time is up, perform a quick release to release the pressure.
  5. Carefully open the Instant Pot lid and add the milk or heavy cream, shredded cheddar cheese, and sour cream to the soup. Stir until the cheese is melted and everything is well combined.
  6. Season the soup with salt and black pepper to taste. If you prefer a creamier consistency, use an immersion blender to partially blend the soup while leaving some potato chunks for texture.
  7. Ladle the soup into serving bowls and top each bowl with the crispy bacon bits, chopped green onions, and additional shredded cheddar cheese, if desired.
  8. Serve the Instant Pot Bacon and Potato Soup hot and enjoy the comforting and savory flavors of bacon and potatoes in every spoon!
