Kaiserschmarrn – What Austria has to offer.

Kaiserschmarrn is a delightful Austrian dessert that will have you coming back for more. Of course they have other delicious food as well, but we are now focusing on this one.

Here’s the recipe to conquer this culinary masterpiece:

Ingredients:

  • 4 large eggs, separated
  • 250g all-purpose flour
  • 30g granulated sugar
  • 250ml milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 50g unsalted butter
  • Powdered sugar, for dusting
  • Optional: raisins, rum-soaked or plain

Instructions:

  1. In a mixing bowl, whisk together the egg yolks, flour, sugar, milk, vanilla extract, and salt until you have a smooth batter. If desired, you can add some rum-soaked or plain raisins to the batter for an extra burst of flavor.
  2. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter until well combined.
  3. Heat a large non-stick skillet or frying pan over medium heat and melt the butter. Once the butter has melted and the pan is hot, pour the batter into the pan, spreading it evenly.
  4. Cook the kaiserschmarrn for a few minutes until the bottom is golden brown. Then, using a spatula or two forks, start tearing the pancake into small pieces. Flip the torn pieces over and continue cooking until they are golden brown on all sides. The torn pieces should be fluffy and slightly caramelized.
  5. Once cooked, transfer the kaiserschmarrn to a serving plate and dust it generously with powdered sugar.
  6. Serve the kaiserschmarrn warm and enjoy it as is or with a side of fruit compote, such as apple or plum.
