The easy Lasagna Soup Recipe

The Lasagna Soup is indeed a real and delicious recipe. It takes all the flavors of traditional lasagna but transforms them into a comforting and easy-to-make soup. This Lasagna Soup captures all the flavors of traditional lasagna but in a comforting and easy-to-eat bowl. It’s perfect for a cozy dinner on a chilly evening. Feel free to customize it with your favorite lasagna ingredients, but don’t go overboard.

Ingredients:

  • 1 pound ground Italian sausage or ground beef
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14 ounces) diced tomatoes
  • 4 cups beef or vegetable broth
  • 2 tablespoons tomato paste
  • Salt and pepper, to taste
  • 2 cups broken lasagna noodles or other short pasta
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, for garnish
  • Grated Parmesan cheese, for serving

Instructions:

  1. Brown Meat:
    • In a large pot or Dutch oven, brown the ground Italian sausage or beef over medium heat. Drain excess fat if necessary.
  2. Saute Onion and Garlic:
    • Add chopped onion to the pot and sauté until softened. Add minced garlic and cook for an additional minute.
  3. Season:
    • Stir in dried oregano, dried basil, and crushed red pepper flakes (if using). Season with salt and pepper to taste.
  4. Add Tomatoes and Broth:
    • Pour in the crushed tomatoes, diced tomatoes, beef or vegetable broth, and tomato paste. Bring the soup to a simmer.
  5. Cook Pasta:
    • Add broken lasagna noodles or other short pasta to the simmering soup. Cook according to the pasta package instructions.
  6. Serve:
    • Once the pasta is cooked, ladle the soup into bowls.
  7. Add Cheese:
    • In each serving, add a dollop of ricotta cheese and a sprinkle of shredded mozzarella cheese.
  8. Garnish:
    • Garnish with fresh basil or parsley.
  9. Serve with Parmesan:
