A delicious beef soup is healthy, flavorful, and comforting. Here’s a recipe for a classic beef soup:
Ingredients:
- 1 pound beef stew meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 can diced tomatoes (14 ounces)
- 2 potatoes, peeled and cubed
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley, for garnish (And maybe sour cream, if you want something different)

Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- Add the beef stew meat to the pot and cook until browned on all sides. Remove the meat from the pot and set it aside.
- In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté for a few minutes until the vegetables start to soften.
- Pour in the beef broth and water, and stir to scrape up any browned bits from the bottom of the pot.
- Add the diced tomatoes, potatoes, bay leaf, dried thyme, and the cooked beef back to the pot.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 to 1.5 hours until the beef is tender and the flavors have melded together.
