Beef Soup, because you deserve it!

A delicious beef soup is healthy, flavorful, and comforting. Here’s a recipe for a classic beef soup:

Ingredients:

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 can diced tomatoes (14 ounces)
  • 2 potatoes, peeled and cubed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish (And maybe sour cream, if you want something different)

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the beef stew meat to the pot and cook until browned on all sides. Remove the meat from the pot and set it aside.
  3. In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté for a few minutes until the vegetables start to soften.
  4. Pour in the beef broth and water, and stir to scrape up any browned bits from the bottom of the pot.
  5. Add the diced tomatoes, potatoes, bay leaf, dried thyme, and the cooked beef back to the pot.
  6. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 to 1.5 hours until the beef is tender and the flavors have melded together.
  7. Season the soup with salt and pepper to taste.
  8. Remove the bay leaf from the pot before serving.
  9. Ladle the beef soup into bowls and garnish with chopped fresh parsley.
  10. Serve the soup hot with some crusty bread or rolls on the side.
