I don’t think I know one person that does not like pancakes. If you know, let me know. Moving on, Here’s a recipe for fruity pancakes
Go to the store and buy these:
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Assorted fresh fruits (such as sliced strawberries, blueberries, bananas, or raspberries)
- Maple syrup, for serving

Instructions:
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. It’s okay if there are a few lumps in the batter.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or cooking spray.
- Ladle about 1/4 cup of batter onto the skillet for each pancake.
- Arrange slices of fresh fruits on top of each pancake. You can mix and match different fruits or focus on one type.
- Cook the pancakes until bubbles start to form on the surface, then flip them over using a spatula.
- Continue cooking for another minute or two until the pancakes are golden brown and cooked through.
- Transfer the cooked pancakes to a plate and keep them warm while you cook the remaining batter.
- Serve the fruity pancakes warm with a drizzle of maple syrup and additional fresh fruit on top.
