Fruity pancakes! Because it’s good

I don’t think I know one person that does not like pancakes. If you know, let me know. Moving on, Here’s a recipe for fruity pancakes

Go to the store and buy these: 

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Assorted fresh fruits (such as sliced strawberries, blueberries, bananas, or raspberries)
  • Maple syrup, for serving

Instructions:

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. It’s okay if there are a few lumps in the batter.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or cooking spray.
  5. Ladle about 1/4 cup of batter onto the skillet for each pancake.
  6. Arrange slices of fresh fruits on top of each pancake. You can mix and match different fruits or focus on one type.
  7. Cook the pancakes until bubbles start to form on the surface, then flip them over using a spatula.
  8. Continue cooking for another minute or two until the pancakes are golden brown and cooked through.
  9. Transfer the cooked pancakes to a plate and keep them warm while you cook the remaining batter.
  10. Serve the fruity pancakes warm with a drizzle of maple syrup and additional fresh fruit on top.

Feel free to customize the recipe by adding your favorite fruits or even adding a sprinkle of cinnamon or a dollop of whipped cream. Enjoy your delicious fruity pancakes!
