Ingredients:

- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 3 cups vegetable or chicken broth
- 1 cup milk or heavy cream
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Optional toppings: shredded cheese, croutons, or sour cream.
Instructions:

- In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant.
- Add the broccoli florets to the pot and stir them with the onions and garlic for a
few minutes. - Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or
until the broccoli is tender. - Using an immersion blender or a regular blender, puree the soup until smooth. Be
careful when blending hot liquids; if using a regular blender, blend in batches and allow the steam to escape. - Return the soup to the pot if using a regular blender. Stir in the milk or heavy cream and dried thyme. Season with salt and pepper to taste. Heat the soup over low heat until it’s warmed through.
- Serve the
creamy broccoli soup hot. Optionally, top it with shredded cheese, croutons, or a dollop of sour cream for added flavor and texture.
