Broccoli soup! Really delicious.

Often enjoyed as a comforting and flavorful soup, particularly during the colder months. Broccoli is a widely available and nutritious vegetable. Burns fat as well. If you don’t add the croutons, this is also a gluten free recipe. It’s the creamiest broccoli soup recipe you can find online.

This is what you need.

Ingredients:

    • 2 tablespoons butter
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 4 cups broccoli florets
    • 3 cups vegetable or chicken broth
    • 1 cup milk or heavy cream
    • 1/2 teaspoon dried thyme
    • Salt and pepper to taste
    • Optional toppings: shredded cheese, croutons, or sour cream.

Instructions:

    1. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant.
    2. Add the broccoli florets to the pot and stir them with the onions and garlic for a
      few minutes.
    3. Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or
      until the broccoli is tender.
    4. Using an immersion blender or a regular blender, puree the soup until smooth. Be
      careful when blending hot liquids; if using a regular blender, blend in batches and allow the steam to escape.
    5. Return the soup to the pot if using a regular blender. Stir in the milk or heavy cream and dried thyme. Season with salt and pepper to taste. Heat the soup over low heat until it’s warmed through.
    6. Serve the
      creamy broccoli soup hot. Optionally, top it with shredded cheese, croutons, or a dollop of sour cream for added flavor and texture.
