Gluten Free – Tacos

This is fairly simple: For Gluten free Tacos you need to use Corn tortillas and fill them with seasoned meats, beans, lettuce, tomatoes, and cheese, basically. But feel free to go wild and fill them with whatever you want to eat. Just don’t overdo it. Here are the needs and the steps:

Ingredients:

For the Seasoned Meats:

  • 1 pound of your preferred protein (chicken, beef, or pork), thinly sliced or shredded
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish

For the Corn Tortillas:

  • Corn tortillas (labeled gluten-free)
  • Olive oil or cooking spray

Toppings:

  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheese (ensure it’s gluten-free)
  • Optional: Black beans or refried beans
  • Optional toppings: Salsa, avocado slices, sour cream

Instructions:

  1. Prepare the Seasoned Meats:
    • Heat olive oil in a skillet over medium heat. Add chopped onions and cook until softened.
    • Add minced garlic and cook for about 30 seconds until fragrant.
    • Add sliced or shredded chicken, beef, or pork to the skillet.
    • Season with ground cumin, paprika, chili powder, salt, and pepper.
    • Cook until the meat is fully cooked and has a golden brown color.
    • Squeeze lime juice over the meat and stir in fresh cilantro. Set aside.
  2. Warm the Corn Tortillas:
    • In a separate skillet, heat the corn tortillas over medium heat. You can lightly brush them with olive oil or use cooking spray to enhance flavor and prevent sticking.
  3. Assemble the Tacos:
    • Place a spoonful of the seasoned meats in the center of each warm corn tortilla.
  4. Add Toppings:
    • Top the seasoned meats with shredded lettuce, diced tomatoes, shredded cheese, and optionally, black beans or refried beans.
  5. Optional: Add Additional Toppings:
    • Customize your tacos with additional toppings like salsa, avocado slices, or sour cream.
  6. Serve:
    • Serve the gluten-free corn tortillas tacos immediately.
