Ingredients:

  • 4 salmon fillets
  • 2 lemons, divided
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 2 red onions, thinly sliced
  • Fresh parsley, chopped, for garnish

Instructions:

  1. rep the Salmon:
    • Zest one of the lemons and then juice both lemons. Combine the lemon zest, lemon juice, olive oil, minced garlic, salt, and black pepper in a bowl.
  2. Marinate the Salmon:
    • Place the salmon fillets in a shallow dish and pour the lemon and garlic mixture over them. Ensure the salmon is well coated. Let it marinate for about 15-30 minutes, turning once or twice.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat.
  4. Grill the Salmon:
    • Lightly oil the grill grates to prevent sticking.
    • Place the salmon fillets on the grill and cook for about 3-4 minutes per side, or until the salmon is opaque and flakes easily with a fork. Cooking times may vary depending on the thickness of the fillets.
  5. Grill the Red Onions:
    • While grilling the salmon, add the thinly sliced red onions to the grill. Grill for about 2-3 minutes per side, or until they’re slightly charred and tender.
  6. Serve:
    • Remove the grilled salmon and red onions from the grill.
    • Serve the salmon on a platter, garnished with the grilled red onions and fresh chopped parsley.
    • Drizzle any remaining marinade over the top.
