Side dish – Oven baked potatoes with slices of bacon and cheese

I believe this need no introduction. The potato is wildly popular everywhere and this combination is just next level. Try it!

Here is what you need for your Oven baked potatoes.

Ingredients:

  • 4 large potatoes
  • 6 slices of bacon
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped fresh parsley or green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and pat them dry. Cut the potatoes into thin slices, but not all the way through. You want them to remain intact at the bottom.
  3. Place the potatoes on a baking sheet.
  4. Drizzle the olive oil over the potatoes, making sure to coat them evenly.
  5. Sprinkle the garlic powder, salt, and pepper over the potatoes, again ensuring they are well-seasoned.
  6. Place the baking sheet in the oven and bake for about 40-45 minutes, or until the potatoes are tender and lightly golden.
  7. While the potatoes are baking, cook the bacon until crispy. Once cooked, crumble or chop the bacon into small pieces.
  8. Remove the potatoes from the oven and carefully insert the bacon slices in between the potato slices.
  9. Sprinkle the shredded cheddar cheese over the potatoes, making sure to get it into the crevices.
  10. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese has melted and is bubbly.
  11. Remove the potatoes from the oven and let them cool slightly.
  12. Garnish with chopped fresh parsley or green onions, if desired, before serving.
