I just started my morning like this. It tastes soo good that you can forgive anyone. Even the Monday day! Add a glass of orange, pineapple or mango juice on the side and you are good to go.

- 2 boiled, fried or steamed eggs
- Salt and pepper to taste

Instructions:
- Toast the slices of whole grain bread until they are golden and crispy.
- While the bread is toasting, peel the ripe avocado and remove the pit. Slice the avocado into thin, even slices.
