The Indian Chicken Curry – Or how to make you go wow.

The classic recipe for chicken curry can vary depending on the region, but one widely recognized and loved version is the Indian chicken curry. Here’s a recipe for a basic Indian-style chicken curry.

Ingredients:

  • 1.5 lbs (700g) chicken, cut into pieces
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, pureed or finely chopped
  • 2 tablespoons curry powder or curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to your preferred spice level)
  • 1 cup coconut milk
  • 2 tablespoons cooking oil
  • Salt, to taste
  • Fresh cilantro leaves, for garnish

Instructions:

  1. Heat oil in a large pan or pot over medium heat. Add the chopped onions and cook until they become golden brown.
  2. Add the minced garlic and grated ginger to the pan. Sauté for a minute or until the raw smell disappears.
  3. Add the chicken pieces to the pan and cook until they are lightly browned on all sides.
  4. In a small bowl, mix the curry powder or paste, ground cumin, ground coriander, turmeric powder, and red chili powder with a little water to form a paste.
  5. Add the spice paste to the pan and stir well, coating the chicken and onions evenly.
  6. Pour in the pureed or finely chopped tomatoes and mix well. Cook for a few minutes until the tomatoes soften and release their juices.
  7. Add salt to taste and pour in the coconut milk. Stir everything together, ensuring the chicken is well-coated with the sauce.
  8. Reduce the heat to low, cover the pan, and simmer for about 20-25 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
  9. Once the chicken is cooked, taste and adjust the seasoning if needed.
  10. Garnish with fresh cilantro leaves and serve the chicken curry hot with steamed rice, naan bread, or your preferred accompaniments.

Feel free to customize the recipe by adding vegetables like potatoes, bell peppers, or peas to the curry. You can also adjust the spiciness level according to your preference by adding more or less chili powder. Enjoy your classic Indian chicken curry!
