The rainbow of flavors! Creamy spinach with eggs and meatballs.

Here is what you need.

Ingredients:

  • 1 pound (450g) fresh spinach leaves, washed and stems removed
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup milk
  • Salt and pepper to taste
  • 4 eggs
  • Meatballs (pre-cooked), as desired
  • Olive oil for frying.

Instructions:

  1. In a large pot, bring water to a boil. Add the spinach leaves and blanch them for about 1-2 minutes until wilted. Drain the spinach and rinse it with cold water to stop the cooking process. Squeeze out any excess water from the spinach leaves and roughly chop them.
  2. In a separate pan or skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped spinach to the pan and stir to combine with the garlic and butter. Cook for 2-3 minutes, allowing the flavors to meld together.
  4. Pour in the milk and bring the mixture to a simmer. Reduce the heat to low and let it cook gently for 5-7 minutes, stirring occasionally, until the milk has thickened slightly and coats the spinach. Season with salt and pepper to taste.
  5. In another pan, heat some olive oil over medium heat. Add the pre-cooked meatballs and cook them until heated through or browned, according to your preference.
  6. In the same pan or in a separate pan, fry the eggs to your desired doneness. You can cook them sunny-side-up, over-easy, or as desired.
  7. To serve, place a portion of the creamy spinach on a plate. Top with the fried eggs and meatballs.
