- Pour in the milk and bring the mixture to a simmer. Reduce the heat to low and let it cook gently for 5-7 minutes, stirring occasionally, until the milk has thickened slightly and coats the spinach. Season with salt and pepper to taste.
- In another pan, heat some olive oil over medium heat. Add the pre-cooked meatballs and cook them until heated through or browned, according to your preference.
- In the same pan or in a separate pan, fry the eggs to your desired doneness. You can cook them sunny-side-up, over-easy, or as desired.
- To serve, place a portion of the creamy spinach on a plate. Top with the fried eggs and meatballs.
