Cobb Salad: A hearty salad typically made with mixed greens, grilled chicken, bacon, hard-boiled eggs, avocado, tomatoes, and blue cheese, all topped with a tangy vinaigrette.

It’s fast and easy to make. Here is what you need:

Ingredients:

For the salad:

  • 4 cups mixed salad greens or romaine lettuce, chopped
  • 2 cups cooked chicken breast, diced or shredded
  • 4 hard-boiled eggs, peeled and chopped
  • 6 strips bacon, cooked and crumbled
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled blue cheese or feta cheese
  • 2 tablespoons chopped chives or green onions
  • Salt and black pepper to taste

For the dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon sugar (optional)
  • Salt and black pepper to taste

Instructions:

  1. In a large salad bowl, arrange the mixed salad greens or romaine lettuce as the base of the salad.
  2. Arrange the diced or shredded chicken, chopped hard-boiled eggs, crumbled bacon, diced avocado, cherry tomatoes, and crumbled blue cheese or feta cheese in separate rows on top of the greens.
  3. Sprinkle the chopped chives or green onions over the salad ingredients.
  4. Season the salad with salt and black pepper to taste.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, sugar (if using), salt, and black pepper to make the dressing.
  6. Drizzle the dressing over the Cobb Salad, or serve it on the side.
  7. Toss the salad gently just before serving to ensure that all the ingredients are coated with the dressing.
