This Meatloaf recipe is a classic comfort food made with ground meat, often beef or a combination of beef and pork, mixed with other ingredients and baked to perfection. No matter how you chose to do it, the result is delicious. Here’s a simple recipe for a classic meatloaf. You can customize this recipe by adding ingredients like diced bell peppers, mushrooms, or different herbs and spices to suit your taste.

Ingredients:

  • 1 1/2 pounds ground beef (you can use a mix of beef and pork if you prefer)
  • 1 cup breadcrumbs
  • 1 cup milk
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped carrot
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Meat Mixture:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, chopped celery, chopped carrot, minced garlic, beaten eggs, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Shape the Meatloaf:
    • Transfer the meat mixture to a lightly greased loaf pan or shape it into a loaf on a baking sheet.
  4. Prepare the Glaze:
    • In a small bowl, mix together the ketchup, brown sugar, and Dijon mustard to create the glaze.
  5. Apply the Glaze:
    • Brush the glaze over the top of the meatloaf, ensuring it’s evenly coated.
  6. Bake:
    • Bake in the preheated oven for approximately 1 hour or until the internal temperature reaches 160°F (71°C).
  7. Rest and Slice:
    • Allow the meatloaf to rest for about 10 minutes before slicing.
  8. Serve:
    • Slice and serve the meatloaf with your favorite side dishes.
