Note: The traditional Slovak garlic soup is known for its strong garlic flavor. Feel free to adjust the amount of garlic to your preference.

Ingredients:

  • 4 cups vegetable or chicken broth
  • 4-6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon dried marjoram
  • Salt and pepper to taste
  • 2 eggs
  • 1 tablespoon vinegar
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Sprinkle the flour over the garlic and oil, and stir well to combine. Cook for another minute to cook out the raw flour taste.
  3. Gradually pour in the vegetable or chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer.
  4. In a separate bowl, whisk together the milk and eggs until well combined. Slowly pour the milk and egg mixture into the soup, stirring continuously.
  5. Add the dried marjoram, salt, and pepper to taste. Continue simmering the soup for another 5-10 minutes to allow the flavors to meld together.
  6. Just before serving, stir in the vinegar, which adds a tangy flavor to the soup.
  7. Ladle the soup into bowls and garnish with freshly chopped parsley.
  8. Serve the garlic soup hot!
